Halloumi is a traditional Cypriot cheese made from unpasteurized sheep’s and goat’s milk. It is white with a salty flavour and a distinctive layered texture, chewy, similar to mozzarella. It is often flavoured with mint and it does not melt when fried, so it’s usually served grilled or fried. Cypriots also use it in other dishes such as pies and cooked pasta.

Ingredients
- 1 pack of halloumi cheese (200g), sliced in 6 slices
- 50ml olive oil
Instructions
- Slice halloumi cheese into 5mm thick pieces and fry in a hot oil for 2-3 min on each side until golden.
- Remove the fried cheese from the skillet or frying pan, drain well and arrange on a plate.
- Sprinkle with freshly squeezed lemon juice and black pepper. Serve immediately. It goes great with basil or mint dressing.
- Note: For a lighter version, grill the cheese and serve sprinkled with the lemon juice; If you cannot find halloumi cheese, you can use provolone.
