Grilled halloumi cheese

Halloumi is a traditional Cypriot cheese made from unpasteurized sheep’s and goat’s milk. It is white with a salty flavour and a distinctive layered texture, chewy, similar to mozzarella. It is often flavoured with mint and it does not melt when fried, so it’s usually served grilled or fried. Cypriots also use it in other dishes such as pies and cooked pasta.
